Xin nian yu kuai!  Happy Chinese New Year!  Welcome Spring!

What better way to usher in the Year of the Rabbit than with a P.F. Chang’s knock-off night?

And now, a note to myself:

Mongolian Beef and Lettuce Wraps are fairly labor intensive.  You may be tempted to skip the Chinese New Year dinner altogether if your afternoon consists of extra-long PTA meetings, Mommy taxi driving, lots of running (literally), and skating lessons for three kids.  Don’t.

Because then you would miss –

Daniel’s awesome prowess with chop sticks…

And Emma’s amazing ability to eat an entire side of beef…

And Joshua repeatedly saying “Chinese New Year ROCKS!” while he tries to refrain from actually drinking the special lettuce wrap sauce…

(Note the tongue – using chopsticks requires a lot of concentration.)

And Bitsy beating her fortune cookie to a pulp with her chopsticks…

(No picture – too much cookie carnage.)

And Jakob sticking his chopsticks up his nose…

(The reason for the lacking picture should be pretty clear in this case.)

And hearing all of the interesting factoids that the offspring learned in school from their wonderful teachers.

(Thank you, wonderful teachers.)

Trust me – all of the chopping and mincing and stirring will be totally worth it.

    Yes! We celebrated too, maybe I will get pictures on my blog one day. I’m glad someone else likes to celebrate things too!
